Q | What are the most popular items on your menu? Why?
A | Pancake balls, pancake balls, pancake balls! I think people like that they’re different, plus everyone loves sweets. They love the wholesomeness of the stoneground flour so it makes them feel good about eating something decadent. The second most popular is my Mazatlan Pork & Egg Sandwich. The ethical slow-roasted pork with my secret sauce is already to die for, but the flavor combination with the creamy avocado and tangy roasted red pepper and the unexpected fried egg–it’s unusually delicious.
Q | Are there any items NOT on your menu that are staff favorites (that you’d be willing to serve up to any customer who asked)?
A | The above! The staff also likes to make “kitchen sink” meals by throwing together ingredients from different dishes – a hodge podge of everything and then they scoop it up with Shagbark chips.
Q | Let’s talk about your balls…your biscuit balls, of course! The biscuit balls are relatively new compared to the pancake balls. What makes them so…baller?!
A | I wanted to combine savory with sweet – thus the apple butter and cheese and ham and I put it on a biscuit and then I went, “Wait! This could work as a ball too!” Why not? It’s a theme here!
Q | Can you share any secrets behind your sweet and spicy bacon? What makes it sweet and what makes it spicy? (I can’t tell you how many times I’ve tried to recreate it at home and become disappointed that it’s not like the bacon I eat at Katalina’s!)
A | With all due respect, it’s a secret. I even have it trademarked. :)
Q | You also serve your amazing food at Oddfellows Liquor Bar in the Short North?! What’s the menu like over there?
A | It’s a bit different, more bar food rather than brunch-focused. I’m also working on some changes and surprise new additions right now.
Q | You have a pretty impressive resume. How did someone with your background get into the restaurant business?
A | I’ve loved to cook since I was 9 years old and then I wanted to open a restaurant since I got out of college, but I had to work a lot of years in order to open Katalina’s!
