Q | What are the most popular items on your menu? Why?
A | If you ask our customers, I bet you’d get a wide variety of answers. We are a build-your-own, fast casual sushi restaurant, so every customer takes a lot of pride in what they create. Since we offer choices every step of the way (seaweed or soy wrap, white or brown rice, cooked or raw proteins, as many and as much vegetables as you’d like and a wide variety of sauces and toppings), it really depends on the customer’s preference. We also switch out a seasonal ingredient every month and customers are always looking forward to work with the new flavor it adds. Our #1 seller for raw fish is the tuna, and our California rolls are very popular. They are built with the crab because it’s mixed with our house-made spicy mayo. And of course, for customers trying sushi for the first time, the signature roasted chicken roll is very popular. For vegetarians, the roasted tofu is all the rage. When it comes to customer favorites, I have to give a shout out to spicy mayo and sweet soy at the sauce station – definitely a fan favorite combination. I am pretty sure the tempura crunch topping has it’s own fan club and people swear by adding sesame seeds to their rolls. I love seeing what customers create and the pride they take in their roll! As for our new [re]fresh beverage line, it’s made daily with all natural and fresh ingredients – it taste just how it sounds, refreshing! Customers stop in between meals just to grab a drink. We love that.
Q | Are there any items NOT on your menu that are staff favorite (that you’d be willing to serve up to any customer who asked)?
A | Great question. Most our our team members add double protein to their rolls, whether inside the roll or by adding crab mix on top. They also love creating the peanut butter and jelly roll with tempura crunch and honey drizzled on top. When it comes to the miso soup, I always find them adding Sriracha and sesame chili flake to spice things up! Since we offer a build your own service, these options aren’t hidden from the menu. We’d serve these team favorites to any of our customers – in fact, we love encouraging our customers to try new combinations.
Q | You specialize in the “build your own” type of dining experience, so what’s on your favorite roll?
Teresa | I love the classic seaweed with white rice combination. Sometimes I like my roll inside-out which means rice on the outside, just depends on how I’m feeling that day. I want a t-shirt that says “roasted tofu’s #1 fan” because I love it so much. I go all-green with my veggie selection: asparagus, avocado, cucumber and jalapeño. I am really pumped when we have brussels sprouts or roasted red pepper to add. I love everything spicy. Wasabi mayo, Sriracha, sesame chili flake, and LOTS of sesame seeds. Wasabi and extra ginger on the side, please!
Emily | I like to keep it simple. It took me three years to explore raw fish, but now I love the tuna – it tastes so good! I go with the soy wrap and white rice. I like cucumber, carrot, green onion and cream cheese. I always top my roll off with wasabi mayo. This is also my favorite combination because all of the colors look really pretty together!

A | Yes, yes and yes. Our five fundamental values are:

These five values are the core of our team. We are committed to providing a dining experience that our customers feel a part of and focus on serving sushi through a fun and approachable experience. Our kitchen is set in the front of the restaurant, so customers can see all of our food preparation and know they’re receiving the freshest ingredients. We live and do business in the same environment – we believe in taking care of it. We use compostable products and focus on energy-efficient building materials. We care about the people we do business with – we want to know our customers and our team members, their passions, their interests, and their favorite sushi rolls. We recruit and advance our leaders from within our organization. We believe in sustainable business practices and we love to support the community around us. Creating relationships and trying new things together makes life more vibrant. As for the ambiance, the store atmosphere and design supports the experience we’re set out to create. And the playlist, well, that’s just our favorite music.
